Almond Meal Pizza

Ingredients:

  • 2 cups Almond meal

  • 2 tbsp Mixed Italian herbs 

  • 2 Eggs

  • Organic tomato paste

  • Prosciutto 

  • Rocket

  • Your preferred cheese (goat’s cheese or DF cheese if desired)

Method:

  • To make the dough, mix almond meal and Italian herbs. Add eggs and mix until it becomes a dough consistency, if dry add a bit of water.

  • Roll into a ball and place between two sheets of baking paper. Roll flat with a rolling pin (or a wine bottle will do the trick). Trim edges if desired and place on a lined baking tray.

  • Bake at 180c for 15 to 20 minutes or until the edges have started to crisp and the crust begins to brown all over.

  • Remove from oven and apply a thick layer of tomato paste then layer with prosciutto, rocket and sprinkle with your preferred cheese.

  • Pop back in the oven for a further 10 minutes and bake until cheese has melted and the edges are golden brown.

  • Slice and serve!
