Zesty Lemon Caramel Balls

Ingredients:

  • 2 1/2 cups cashews

  • 1/2 cup macadamia butter (don’t sub this out for anything else, its the secret)

  • 4 pitted medjool dates (and 4 only)

  • Zest of 1 lemon + a squeeze of juice

  • 2 tbsp pana cashew caramel (optional)

  • 2 tbsp shredded coconut (optional)

Method:

  • Blend all ingredients together in a mixer and roll into small balls.

  • Drizzle plant based pana caramel dressing and shredded coconut on top.

  • Place in freezer until ready to eat.

  • Will keep well in freezer for up to 2 months, defrost for 5 mins when ready to eat.
